Zucchini Muffins

Preheat 350 oven & grease 12 muffin tin


DRY INGREDIENTS BOWL:

Combine:

1 1/2 cup flour (or 6.75 oz)

1/4 cup sugar

1 teaspoon baking soda (not baking powder)

1 teaspoon ground cinnamon

½ teaspoon salt


WET INGREDIENTS (In a separate bowl)

 mix together:

1 egg, lightly beaten

½ cup vegetable oil

¼ cup milk

1 tablespoon lemon juice

1 teaspoon vanilla extract


Mix dry &wet together only until dry ingredients are just moistened


Fold in all at once:

1 cup shredded zucchini

½ cup dark chocolate chips (optional)

½ cup chopped pecans (optional)


Fill prepared muffin cups 2/3 full.

Bake 350o 20-25 minutes (when toothpick comes out clean)
