Spaghetti Sauce from Scratch Quick & EZ

Serves 4

Brown in olive oil (sauté)

1/2 onion chopped

4 baby-bella mushrooms

2 cloves garlic minced (or 1 teaspoon bottled minced garlic)

4-5 tomatoes pealed, chopped and squeezed  (or 1–28 oz can tomato chunks-drained & squeezed)

Boil large sauce pan of water and make pasta of choice according to package directions

While the pasta is cooking, add spices to veggies

Sprinkle with Italian Seasoning (spices that are already mixed for this purpose)

Sprinkle with salt and pepper

Pinch of coriander (1/8 teaspoon) (optional but very good to add)

Taste to decide if more seasoning is needed.

Drain pasta and serve as you choose.  I like to keep pasta separate and top with the sautéed sauce.  Sprinkle with parmesan cheese.

NOTE: if you want to add 1/2 pound ground beef be sure to brown first and stir into the veggies before serving.
