Irish Soda Bread

Grease cookie sheet or use parchment paper and preheat oven to 400 degrees

1 cup milk plus 2 teaspoon white vinegar (or 1 cup buttermilk)

If using milk stir together milk with vinegar and let sit to sour while you assemble the rest ingredients

In a separate bowl whisk together:

2 cups flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 Tablespoon sugar (optional)

With large spoon, make a well in dry ingredients and add soured milk into center

Stir from the center in a circle just until the flour and milk are mixed together (do not over work) to make a very stick dough.

Sprinkle counter with plenty of flour and pour out very sticky dough on it.

Coat hands and top of dough with flour and begin to form a disk while pressing the flour into the dough. Continue to add flour to the counter and move the dough around to take on the flour and until it no longer sticks to the counter or your hands.  

Place onto prepared cookie sheet

Cut 1/2" deep cross on top (clean and oil blade between cuts)

Bake 30 - 35 minutes in the middle rack until crusty brown


Savory bread-1 teaspoon thyme, 1/2 teaspoon garlic powder

Sweet bread-1/4 c brown sugar, 1/2 c raisins, 1 teaspoon cinnamon, dash of cloves & nutmeg
