Mulberry Jam using Instant Pectin

Smash down berries until juice is level to the berries

1 2/3 cup mulberries

Start with 2 Tablespoons sugar & taste.  Then add more & taste until it is sweet to your liking.

2 Tablespoons to 1/4 cup sugar or convert to Stevia according to bottle (less than sugar)

Add and stir:

1 tbsp lemon juice

Pinch salt

Stir in Instant Pectin to mixture:

1 Tablespoon  Instant Fruit Pectin (be sure it is "instant")

This will set up for use in 30 minutes.  

(Keep in the refrigerator for 3 weeks or freeze up to a year.)
