Healthy Granola

Preheat oven to 325 degrees


Mix in a large mixing bowl and stir

4 cups quick oats (can substitute Old Fashioned Rolled)

1 teaspoon salt

1 teaspoon cinnamon

(optional) 1 cup chopped nuts and/or seeds

Add and Mix well, until all dry ingredients are coated

(NOTE: Do not add dried fruit until after baking)


In another bowl

1/2 cup melted coconut oil

1/4 cup maple syrup

1 teaspoon vanilla extract


Add wet to dry ingredients and mix.  

Pour granola onto parchment paper lined cookie sheet and spread evenly


Bake at 325 degrees 10 minutes

Stir then return to oven

Bake another 10 minutes or until golden brown around the edges


When totally cooled you may add:

2 handfuls dried fruit (about 2/3 cups) (if large pieces cut into bite size)

or a sprinkling of chocolate chips (about ½ cup)


You can store the cooled granola in an airtight container in cupboard 2 weeks

(or in a sealed freezer bag in the freezer for up to 3 months)
